Beautiful edible heirloom plant with bold, deeply lobed, silvery-green leaves that grow in a giant rosette (up to 4 ft. tall). Fleshy flower buds are 2 in. to 5 in. in diameter, which are the edible portion. Transplants should produce artichokes the first year. If not cut, the buds open to purple thistle-like flowers. Perennial in mild climates (zones 8 and 9). Cut in late summer before fruits open. Maturity: 120-days after planting.
