When you think of the classic big, beautiful eggplant, youre probably picturing Black Beauty. Tender purple-black fruits are just right for breading and frying. Be sure to plant after the last chance of frost in the spring, as eggplants are easily damaged by cold temperatures. Fruits are ripe and ready to harvest when skins are richly colored and glossy, regardless of size.
